The Danes are, overwhelmingly, a happy bunch. Copenhagen’s restaurants have more Michelin stars than any other Scandinavian city, and Denmark as a whole would doubtless have more still if the inspectors from Michelin ever troubled themselves to leave the capital and head for Aalborg or Århus & around. Even standards in a workaday Danish café are generally very high.
Norway is, by any standards, one of the most beautiful countries on earth, but that beauty brings with it a responsibility that weighs heavily upon Norwegians. For here is a people with an enduring love for the natural world that is profoundly etched into the national character. In the past, this was expressed in the Norwegian tradition of isolated farmsteads that colonized the most secluded corners of the country’s wilderness.
